This nourishing, homemade roasted chicken is a flavorful, wholesome alternative to store-bought rotisserie options—many of which are often made with preservatives, inflammatory oils, and are sometimes packaged in plastic. For the Chicken & Stuffing:
• 1 whole organic, pasture-raised chicken
• ½ onion, peeled and quartered
• 1 lemon, quartered
• 5 whole garlic cloves, peeled
For the Herb Rub:
• ⅓ cup avocado oil or olive oil
• Juice of 1 lemon
• 5 garlic cloves, minced
• 1½ tbsp rosemary (fresh or dried)
• 1½ tbsp thyme (fresh or dried)
• 2 tsp sea salt
• 1 tsp black pepper
๐งผ How to Clean a Whole Chicken (Optional but Recommended)
1. Use gloves for easy handling. Remove the giblets from inside the cavity and discard or save for broth.
2. Trim excess fat, loose skin, and the tail area for a cleaner finish.
3. Gently slide your hand under the skin, especially around the thighs, to remove any residue.
4. Check for any remaining feathers and carefully remove with a knife or tweezers.
5. Rinse the chicken under cold water and pat completely dry with paper towels—this helps the skin become crispy when roasting.
๐ฅ Roasting Instructions
1. Preheat oven to 400°F (200°C).
2. Place the cleaned chicken breast-side up in a baking dish.
3. In a small bowl, whisk together all the herb rub ingredients.
4. Lightly season the chicken with extra salt and pepper.
5. Generously rub the herb mixture all over the chicken—don’t forget under the skin for added flavor.
6. Stuff the cavity with onion, lemon, and whole garlic cloves.
7. Tie the legs together with kitchen twine to help the chicken roast evenly.
8. Bake uncovered for 1 hour.
9. Baste the chicken with the pan drippings.
10. Cover loosely with foil and roast for an additional 15–30 minutes, depending on the size of your bird.
11. Let rest for at least 10 minutes before carving to lock in the juices.
