🧇 Ingredients  (Makes 13–15 waffles)

 2 cups oat flour

 3 tbsp ground flaxseed

 1/4 cup MCT coconut oil (or coconut oil of choice)

 2 tsp baking powder

 1 tsp cinnamon

 Pinch of salt

 ripe banana

 medium or large carrot

 2/3 cup sauerkraut, rinsed and patted dry

 4 tbsp maple syrup

 2 tsp vanilla extract

 1 1/3 cups dairy-free milk (almond, oat, or coconut)


🥣 Instructions

1. Preheat your waffle iron and lightly grease it with oil or spray.

2. In a blender, combine the banana, chopped carrot, sauerkraut, dairy-free milk, maple syrup, vanilla extract, and oil. Blend until completely smooth.

3. In a large bowl, whisk together oat flour, flaxseed, baking powder, cinnamon, and salt.

4. Pour the blended mixture into the dry ingredients and stir until just combined. Let the batter sit for 5 minutes to thicken slightly.

5. Scoop batter into your waffle iron (amount depends on the size of your maker). Cook according to your waffle maker’s instructions until golden brown and crisp.

6. Let cool slightly and serve warm with your favorite toppings—like nut butter, berries, or extra maple syrup!
