🍴 Ingredients:

 2 large eggs

 1/3 cup unsweetened almond milk

 1 tsp vanilla extract

 2 tbsp pure maple syrup

 1 1/2 cups oat flour

 2 tsp baking powder

 1 tsp ground cinnamon

 Pinch of salt

 2 medium-large carrots (shredded or whole to blend in)

 1/4 cup coconut oil with MCT

 Optional: handful of raw, unsalted pumpkin seeds (blend or fold in)

 Optional: handful of raw, unsalted almonds (blend or fold in)

 Optional: a few spoonfuls of dried cranberries (fold in after blending)

1. Blend the base: Add all ingredients except seeds, almonds, and cranberries into a high-speed blender.

 Tip for picky eaters: Add the carrots, seeds, and almonds now and blend until smooth—no bits or textures to give you away!

2. Blend until smooth: The batter should be creamy and pourable. Add a splash of almond milk if it feels too thick.

3. Add crunch (optional): Fold in chopped pumpkin seeds, almonds, and cranberries if you didn’t blend them in earlier.
