 Veggie-Packed Waffles (Gluten-Free & Dairy-Free)


These delicious, nutrient-dense waffles are packed with hidden veggies, fiber, and brain-boosting ingredients—perfect for picky eaters!

Ingredients:

 ½ cup raw sweet potato 

 ½ cup raw zucchini                                         

 ½ cup raw carrot 

 ½ cup spinach 

 1 ½ cups Oat Flour

 2 tsp  Baking Powder

 Pinch of salt

 1 tsp cinnamon

 ¾ cup dairy-free milk (almond, coconut, or oat)

 ¼ cup melted MCT Coconut Oil or Avocado Oil 

 2 eggs

 2 tbsp Maple Syrup

 1 tsp vanilla extract

 1 tbsp Hemp Seeds

 1 tsp Chia Seeds


Instructions:

1. Blend the veggies – Blend the milk and all the veggies together so that they are unnoticeable in the waffle.

2. Mix dry ingredients – In a large bowl, whisk together Oat Flour Baking Powder, salt, cinnamon, Hemp Seeds, and Chia Seeds.

3. Mix wet ingredients – In a separate bowl, whisk eggs, melted oil, Maple Syrup, vanilla extract and the blended veggies. 

4. Combine everything – Gradually mix the wet ingredients into the dry

5. Let the batter rest – Allow it to sit for 10 minutes to thicken.

6. Cook the waffles – Preheat your waffle iron and lightly grease it. Pour batter in, cook according to your waffle maker’s instructions, and remove when golden brown. (Mine is about 7 mins)

7. Serve & enjoy! – Top with fresh fruit, nut butter, maple syrup or my homemade jam!

These waffles freeze well, so make extra and pop them in the toaster for a quick, healthy breakfast! 🧇💚
