Gut-Healing Avocado Brownies
Gut-Healing Avocado Brownies 🍫 (Gluten-Free & Dairy-Free)
Ingredients
- ½ cup Gluten-Free Flour
- 1 ripe avocado, mashed 🥑
- 2 scoops protein powder (Orgain or Prime Protein)
- 2 eggs 🥚
- 1 tbsp of cocoa powder
- 1 tbsp flax seeds (fiber + omega-3s!)
- 1 tsp baking soda (helps with texture)
- ½ cup maple syrup 🍁
- ¼ cup coconut oil (MCT oil preferred) 🥥
- Pinch of cinnamon & salt
- ¼ cup pumpkin seeds (for crunch + zinc boost)
- ⅓ cup GF DF chocolate chips
📌 Makes 8-12 brownies
- Preheat oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment paper.
- In a bowl, mash the avocado until smooth. Add eggs, maple syrup, and coconut oil. Mix well.
- Stir in protein powder, gluten-free flour, baking soda, flax seeds, cinnamon, cocoa powder and salt until combined
- Fold in pumpkin seeds.
- Pour batter into the prepared pan, smooth the top evenly, and sprinkle chocolate chips on top.
- Bake for 20-25 minutes, or until a toothpick inserted comes out with a few moist crumbs.
- Let cool completely before slicing.
- Swap maple syrup for honey or monk fruit sweetener for a lower-sugar version.
- Store in an airtight container at room temp for 2 days or refrigerate for up to a week.
